Nasi Goreng, is a classic indonesian dish. It is fried rice, cooked in the indonesian's penchant for curry-style dishes.The use of ground peanuts is a common touch in this country's cooking style. It is nice to serve with grilled or roasted meat , some cold beer or wine and fresh tropical fruits.
Nasi Goreng
2 cups cooked rice
1 cup shrimp, minced
2 onions, chopped
1 cup grated coconut (freshly grated coconut is more flavorful but one can use the dried , prepacked ones)
1 cup ground peanuts
butter
cubes of fried pork (amount dependent on cook)
1/2 lb. cubed, cooked ham
2 eggs.
salt, paprika
tabasco sauce
chopped parsley
Fry cold leftover rice in butter, turning often until golden.
Sprinkle paprika, a little Tabasco and some salt over rice.
Fold in the cooked shrimp, fried onion, pork and ham. Leave in covered pan to keep warm.
Brown coconut in a separate pan.
Toast peanuts, put coconut and peanuts in separate side dishes.
Beat eggs with 1 tsp. of water and make into a thin omelet.
Fry eggs until done and cut into thin strips . Decorate rice dish with egg strips.
Serve rice and then pass the condiments so diners can take as much as they wish.
